Olive and Chicken Couscous


Made Olive and Chicken Couscous from the recipe that I got from the latest Rachael Ray magazine. The only problem was that I forgot to add the zucchini. (You can't really see the chicken in this picture.)


First you brown the chicken in a pan. Then, add your vegetables (any will do and you don't really have to add the olives). Cook for 2-4 minutes.


Add olives (optional) and cook for a few more minutes until chicken is cooked thoroughly.


Add chicken broth and bring to a boil. Then, add appropriate amount of couscous (directions on box) and cover. Remove from heat and let sit for 10 minutes. Then fluff with a fork and eat.

I thought that you would get a kick out of this last picture. You see, we don't have a lid for the large pan on the bottom of this picture. But, we do have another similarly sized large pan that we don't use because the non-stick has worn off. However, we keep it around to act as the lid for the bottom pan on the occasions that we need one. Like it?
